Per-square-foot pricing is the fastest way to sanity-check a kitchen quote, and the easiest way to fool yourself. Kitchens don't scale like flooring: a big chunk of the cost sits in appliances, plumbing and electrical that cost the same whether the room is 90 or 190 square feet. A 90 sq ft galley still needs a range, a fridge, a dishwasher, a sink, a hood vent, GFCI circuits and a permit. Spread those fixed costs over 90 feet instead of 200 and the rate jumps 30–50%. Don't panic when your tiny kitchen prices at $380/sq ft — check the total, not the rate.
